VINIFICATION

  • Charmat Method
  • Controlled fermentation at about 16-17°C up to reaching 5% vol. alcohol
  • Refermentation in autoclave
  • Ageing in bottle for 1 month before release
  • Racking with use of gravity and inert gas

ORGANOLEPTIC PROFILE & ANALYTICAL DATA

  • Colour: Brilliant straw yellow. Perlage is fine and persistent
  • The nose presents intense aromatic notes of white fruit and sage
  • In the mouth it is sweet with a pleasant freshness and sapidity and a finish that confirms the nose
  • ABV: 5 – 5,5 % vol.
  • Total Acidity: 6-6,5 gr/lt
  • Residual Sugar: variable depending on the year, 120-140 gr/ lt
  • Bottles Produced: 4000
  • Food Matches: all kinds of dessert, hard cheeses
